I adore comfort food and lots of cheese! My favorite and easiest recipe of Chicken Fettuccini Alfredo hits all of the comfort food feels for our family. It is very cheesy and super delicious. And although I serve it with a side salad full of healthy vegetables, this meal definitely fits into the comfort food category.

Today, I made Chicken Fettuccini Alfredo for my family because my kiddos actually ask for it. When I ask everyone, “So, what meal would you like me to put on the weekly menu?” 99% of the time, this one makes the list. (I’ll share others with you over the next few months.)

What you need

Chicken Fettuccini Alfredo may sound fancy and difficult to make but it is not. And honestly, it does not take many ingredients to make. You will need:

  1. Chicken (cooked) – rotisserie, canned or any type of chicken you have on hand. When I made this recipe last night, I used some chicken breasts I had in the freezer.
  2. Heavy Cream – you can use store bought but I head to the local dairy.
  3. Regular Milk
  4. Parmesan Cheese – I great this myself and always have extra on hand for when the meal is served. I would NOT suggest using the green can.
  5. Eggs – I usually put one or two eggs into the milk mixture for extra protein for our family and you can use store bought eggs but I use our farm fresh eggs.
  6. Parsley or basil – I use fresh parsley but you can use dried herbs. I sometimes will use basil instead of parsley. It just depends on what I have on-hand.
  7. Fettuccini (or any other type) noodles – you can use any type of noodle. I generally will make my own fettuccini pasta (recipe will come soon to the blog) but store bought works just as good.
  8. Butter – well, butter! The more the better!
  9. Flour – for thickening. You can also use arrowroot flour or any other type of thickening agent.
  10. Salt and Pepper to taste.
  11. Garlic – we love garlic on the farm. I always add a few cloves to this recipe.
  12. Pot, pan, and utensils.
  13. Salad ingredients – you can use any veggies, lettuces, spinach, etc.

Putting it all together

This recipe really is made easy because you precook everything that is in the recipe. {recut everything for your side salad. Precook your chicken and dice or pull it apart. Precook your noodles. And make the alfredo sauce. Then put everything together in one large pot or use a deep skillet for the sauce and add everything to that making this a one pot/pan meal. And voila, dinner is served!

Good meals do not have to be difficult or time consuming to make. I hope you enjoy this recipe!

Ingredients

  • Chicken - Rotisserie, canned or any chicken meat that you have on hand. I use about 3 chicken breasts.
  • Heavy Cream - 1/2 cup
  • Whole Milk - 3 to 4 cups
  • 1/2 cup of butter
  • Egg(s) - 1 or 2 your choice
  • Garlic cloves - 3 cloves minced
  • 2-4 Tbsp of flour or thickening agent
  • Parmesan cheese - 1/2 to 1 cup
  • Salt and Pepper to taste
  • Fresh parsley or basilĀ 
  • Fettuccini or any other type of noodle
  • EXTRA - Ingredients for Salad (your choice of items)

Instructions

  1. Gather and cook your chicken. If using rotisserie, debone the chicken. If using canned, open and drain. If using fresh chicken breasts, use olive oil and cook chicken on both sides. Once finished, you can cube, chunk, or pull apart the chicken breasts. Put aside.
  2. In a large pot, boil water for noodles. Cook noodles until al dente. Drain and set aside.
  3. In a large deep PAN, melt butter. Add garlic, salt and pepper. Add flour and mix well with butter.
  4. Add heavy cream and milk into pan. Add parmesan cheese. Stir constantly until sauce begins to thicken.
  5. Add chicken, noodles, and parsley/basil to pan. Mix all ingredients together.
  6. Once mixed, your meal is ready!

    Serve hot with salad as a side dish. Bread/ Garlic Bread also works great with this meal.

Notes

This meal is so easy and such a filler-upper! My entire family loves it. It gives all of the comfort food feels and is a great quick meal for busy weeknight.

This meal can be served with salad and/or garlic bread.
